Grease Trap Rules in Rapid City: What the City Requires, and What's Just Good Practice
Here’s the straight answer most grease-trap vendors won’t give you: Rapid City has no codified grease trap pumping interval and no dedicated FOG program. What the city does have is a sewer-use ordinance — RCMC Chapter 13.16, administered by the Water Reclamation Division — that prohibits discharges that damage or obstruct the sewer system. RCMC Chapter 13.16 is Rapid City’s sewer-use chapter. So the honest framing isn’t “the city makes you pump.” It’s that a working trap is the only thing standing between your fryers and that sequence — and the trap only works when it has capacity.

The standard everyone in the industry quotes: pump when combined fats, oils, grease, and solids reach 25% of the trap’s capacity. Past that point, retention time collapses and the trap increasingly passes grease straight through — you have plumbing shaped like a trap that no longer traps.
Label it accurately: the 25% rule is an EPA-recommended best management practice and the working industry standard. Summer covers running double the winter’s put double the fats and oils through the trap from June through September, and rally-season kitchens near Sturgis compress a season’s load into weeks. A flat quarterly schedule set in January will be too tight in February and too loose in July.

Second, make sure the inlet and outlet tees get checked: a broken tee passes grease downstream no matter how often you pump.

Published ranges, because grease vendors hiding prices is a habit worth breaking: indoor and under-sink traps (20–100 gallons) run $150–$450 per visit, with recurring routes bottoming out around $125.
